Real Deal Crêpes

For all your pancake day needs.

It's debatably the best day of the year. The day when breakfast food at lunch (and dinner) is socially acceptable. The day when the world is that little bit better. It's pancake day. If you're a die hard fluffy pancake fan, unfortunately this isn't the place for you (this is). Pancake day calls for the flatter stuff, and that's what we're here for. All this recipe is calls for 6 ingredients, 30 minutes and a few hungry people. 

Ingredients (makes 8 crêpes)

1 cup flour 

1/2 cup almond, soy, oat (etc.) milk 

1/2 cup water

2 tbsp brown sugar

3 tbsp neutral oil (sunflower or coconut) 

1/4 tsp salt 

Method 

1) In a bowl, combine flour, milk, water, sugar, oil and salt. Whisk until fully combined and clump-less. 

2) Heat a non-stick pan over medium heat. Pour a 1/4 cup batter into a the pan and swirl so the batter covers the surface of the pan. Cook for around 2 minutes, until the crepe is set and the bottom is golden. Flip and for another minute on opposite side.

3) Serve warm!
