Lasagne Caponata

We slow-cook aubergines and tomatoes with olives, capers and raisins to deepen the flavours, then pour it amongst layers of lasagna and spinach and top with pine nuts and our light butternut squash béchamel.

This Lasagne is our plant-powered take on an Italian classic. Season to your liking and enjoy with a fresh salad or seasonal steamed greens.

Oven Only, 40 - 45 mins

Pre-heat your oven for 10 mins. Remove sleeve and pierce recyclable film. Cook on a baking tray in the centre of the oven. Leave to stand for 1 min before removing film and plating to enjoy fresh.

200°C, Fan Oven
