Sophie’s Kitchen, a US plant-based ‘seafood’ company is behind a lot of the hype. The shrimp in question are made from vegan ingredients and get their ‘fishy’ texture and salty flavours mostly from carrageen seaweed and alginate. 

And they’re not only owning the hyper-realistic vegan shrimp game, but they also produce plant-based ‘Toona’, crab cakes, fish fillets and smoked salmon.
