What is German yeast cake?
Well, it’s pretty much as you’d expect. A cake that has a batter made with yeast. It’s somewhere between a loose crumb sweet cake and a bake with an enriched dough, like brioche except that here yeast is used as a leavening agent for it to rise.
It’s traditionally topped with a streusel, not dissimilar to the buttery, flour topping of a crumble.
Is German Yeast Cake vegan-friendly?
No, traditional yeast cake isn’t suitable for vegans because it contains butter, milk and eggs. However, it’s easy to make a plant-based version.
