Have you been inspired by this year bread week on Bake Off and fancy making your own plant-based milk bread, but not sure where to start? You’ve come to the perfect place.

What is milk bread?

Japanese milk bread is also known by its traditional name of Hokkaido or shokupan, is a light and fluffy bread made from enriched dough. It’s a tender loaf of bread made from the enriched dough (think the same category as brioche or babka) that originates from Japan. You start with a roux starter, also known as tangzhong which is then mixed into the dough.
