It's hot, we know. So it's lucky that these fudgy blueberry blondies only take 10 minutes to throw together. They're also perfect with ice cream, which you obviously have in your freezer because it's! so! hot!
1 cup nut butter (we used cashew)
1/2 cup plant-based milk (we used soy)
3/4 cup coconut sugar or other sugar
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup blueberries
Pre-heat your oven to 180C.
In a bowl, mix your nut butter, plant milk, sugar and vanilla extract. Sift in your flour, baking soda and salt.
Line a baking tray and pour your blondie mixture into it. Spread your blueberries evenly on top, and press them down lightly.
Bake your blondies for 35-40 minutes, until they're golden and a knife inserted in the centre comes out clean.
