Vegan Chocolate Peanut Caramel Matzo Crunch

This perfectly nutty and sweet treat is great to make for yourself or gift to your loved ones. Vegan and gluten-free, this decadent matzo crunch is great for passover and super easy to whip up.

Ingredients
3 sheets of matzo (vegan + gluten free)
150g dark chocolate
100g peanut butter
55g coconut oil
30g dark muscovado sugar
25g peanuts
Method
STEP 1
Spread the matzo over a lined baking tray, making sure to cover as much of the bottom as possible (break them up where you have to)
STEP 2
Next make the peanut caramel by heating up the coconut oil until hot, before whisking in the sugar. When the sugar is dissolved, remove from the hob and quickly add the peanut butter. Stir until the mixture is combined and pourable, and should be a rich caramel colour.
STEP 3
Pour half the peanut caramel over the matzo and spread evenly, before popping in the oven for about 8-10 minutes.
STEP 4
While this is in the oven, melt your chocolate by breaking it into chunks and pouring into a heatproof bowl on top of a saucepan of boiling water.
STEP 5
When it’s melted, pour the rest of your peanut caramel over your matzo, and then pour your dark chocolate. For the marbling effect, take a knife and lightly mix figure-of-eight shapes on the surface of the matzo.
STEP 6
Roast your peanuts for about 5 minutes, until they start to turn brown, and roughly chop or grind.
STEP 7
Sprinkle the roasted peanuts evenly across the matzo and leave to cool in the fridge.
STEP 8
When the matzo has hardened, top with flaxy sea salt and cut into triangles, and serve!
