Vegan Cinnamon Buns

If you bake anything this month it should be these. Soft, sweet, gooey cinnamon buns. We promise they’re worth every second of rising and kneading.

Ingredients
Dough:
420 g flour
50g granulated sugar
1 1/2 tsp cardamom, ground
7g fast action dried yeast
230ml lukewarm plant based milk
60g plant based butter, melted
1/4 tsp salt
Filling:
75g plant based butter
1/4 cup dark brown sugar
4 tbsp granulated sugar
1 1/2 tbsp cinnamon
2 tbsp milk, for brushing
Method
STEP 1
Combine flour, sugar, cardamom and yeast in a bowl and mix.
STEP 2
Add the milk, butter and salt and use a wooden spoon to mix until the dough starts coming together. At this point, use your hands to knead the dough for 4-5 minutes, until it is no longer sticky (add an additional 1-2 tbsp of flour if necessary) and can be formed into a ball.
STEP 3
Cover the bowl with a tea towel and let rest in a warm spot until doubled in size (depending on how warm the room is, this can take anywhere from 1-2,5 hours).
STEP 4
In the meantime make your filling by mixing together butter, sugar, and cinnamon in a bowl until it is fully incorporated.
STEP 5
Once your dough has risen, transfer it to a floured surface. Roll and stretch out the dough to a rectangle that's about 5 mm thick. Spread the cinnamon butter evenly along the dough.
STEP 6
Carefully lift 1/3 of the dough (closest to you) and fold over to the middle, then fold down the top third. This should leave you with another rectangle. Using a knife, cut the rectangle into 3cm strips. Take each strip, and starting 1/4 of the way down, carefully slice the strip in half (so the top is still connected and the rest of it split). Carefully twist these small strips around then tie them into a loose knot.
STEP 7
They don't need to be perfect, have fun with it - they'll be delicious either way! Put on a parchment lined baking tray, cover with a kitchen towel and let rise for another 45 mins.
STEP 8
Pre-heat your oven to 200˚C. When they've risen, brush the buns with the milk, then transfer to oven. Bake for 13-14 minutes, until golden.
STEP 9
Remove from oven, let cool until you can hold them, then tuck in!
