Creamy Vegan Porridge

This 15 minute just-sweet-enough, creamy and crunchy bowl of oats and stewed fruit is what your busy week needs. To save even more time in the morning, make a big batch of it on a Sunday and have breakfast ready in minutes all week long.

Ingredients
Oats:
200g oats
500ml plant based milk (we used almond)
500ml water
¼ tsp salt
2 tbsp maple syrup
Stewed fruit:
450g berries or plums (fresh or frozen), halved
½ vanilla pod or 1/2 tsp vanilla extract
⅛ tsp cinnamon, ground
1 orange, juiced
2 tbsp maple syrup
50ml water
Pinch of salt
To serve:
Plant based yoghurt
Granola
Method
STEP 1
To make the oats, combine the oats, milk, water and salt in a saucepan and bring to a simmer over medium heat. Cook for 10-15 minutes, until soft and creamy. Remove from heat and stir in your maple syrup.
STEP 2
In the meantime, prepare the stewed fruit, combine the sliced fruit, vanilla, cinnamon, orange juice, maple syrup, and water in a saucepan. Bring to a boil over medium heat, then lower to a simmer and let cook for 10-12 minutes, until the fruit has broken down. Add a pinch of salt and taste. Add an extra tbsp of maple syrup to taste.
STEP 3
Serve the oats topped with stewed fruit, a couple tbsp of yoghurt, a few tbsp of granola and a splash of maple syrup.
