Our version of Dalgona Coffee is everything you want in both a caffeine hit and afternoon pick me up - it's chocolatey, fluffy and sweet. Do it, if not for yourself, then for your IG feed.
2 tbsp instant coffee
1 ½ tbsp sugar (white or brown both work)
2 tbsp boiling water
1 tsp cocoa powder
6 ice cubes
400-420ml plant based milk (depending how large your glass is)
In a large bowl, combine dried instant coffee, sugar, cocoa (if using) and boiling water. Use a whisk (or an electric mixer) to whip the ingredients until the mixture is fluffy, light brown and holds stiff peaks when lifted. Depending on the velocity or strength of the whisking, this can take anywhere from 5 minutes to 10.
