Peanut Butter and Jam Oats

The original power couple, reinvented for when you need to switch it up from your usual PB&J toast morning routine but don't want to stray too far. It's a classic for a reason after all. These creamy oats come together with minimal effort and make the perfect vessel for jammy stewed fruit and creamy (or crunchy) peanut butter. Yes, you can use store-bought jam instead of stewing your own fruit, but it takes under ten minutes (eight to be precise) and makes everything taste juicy, fresh and delicious.

Ingredients
Base:
120g oats
150ml plant based milk
150ml water
¼ tsp salt
2 tbsp maple syrup, optional
Topping:
200g frozen berries
2 tbsp maple syrup
½ lemon, juiced
60g fresh berries, halved
4 tbsp peanut butter
2 bananas, sliced
Method
STEP 1
Start by preparing the oats. Combine the oats, milk and water in a saucepan and bring to a simmer over medium heat. Gently simmer the oats for 10-12 minutes, until thick and creamy. Stir in the salt and maple syrup (if using).
STEP 2
While the oats cook, prepare the topping. Combine the frozen berries, maple syrup and 40ml of water in a small saucepan over medium heat.
STEP 3
Simmer the berries for 7-8 minutes, stirring occasionally until saucy. Squeeze in the lemon juice, and taste for sweetness. Add an extra tbsp of maple syrup to taste.
STEP 4
Serve the oats topped with a couple tbsp of stewed berries, a spoonful of peanut butter, slices of banana and fresh berries.
