Strawberry & Lime Ice Lollies

When it’s too hot to cook or move, make these and have them for breakfast all week long. They’re as refreshing, sweet and tangy as it gets and come together in a blender - no stove required. If you can’t find frozen strawberries, sub them for fresh and give them an extra hour to freeze, or use a different berry entirely.

Ingredients
Ice Lollies:
350g frozen strawberries
2 limes, juiced
260ml water
90g caster sugar
¼ tsp salt
Method
STEP 1
In a blender, combine the strawberries, lime juice and water. Blend on high speed for 2-3 minutes, until the mixture is smooth. Add the sugar and salt, and blend again until combined.
STEP 2
Place a fine mesh strainer or sieve over a large bowl, and pour the strawberry mixture over it. Use a spoon to help strain the mixture, separating the seeds and the puree.
STEP 3
Use a spoon to fill six ice lolly moulds, leaving ½ cm of space free at the top.
STEP 4
Freeze the ice lollies for 30 minutes, then carefully insert the sticks in the centre of each mould. Place the ice lollies back into the freezer, and freeze until completely solid, 3-4 hours.
