Vegan Crêpes

It's debatably the best day of the year. The day when breakfast food at lunch (and dinner) is socially acceptable. The day when the world is that little bit better. It's pancake day. If you're a die-hard fluffy pancake fan, unfortunately, this isn't the place for you (this is). Pancake day calls for the flatter stuff, and that's what we're here for. All this recipe calls for is 6 ingredients, 30 minutes and a few hungry people.

8 crêpes
Ingredients
1 cup flour
1/2 cup water
1/2 cup plant based milk (almond, soy or oat all work well)
2 tbsp brown sugar
3 tbsp neutral oil (we used sunflower)
Method
STEP 1
In a bowl, combine flour, milk, water, sugar, oil and salt. Whisk until fully combined and clump-less.
STEP 2
Heat a non-stick pan over medium heat. Pour a 1/4 cup batter into the pan and swirl so the batter covers the surface of the pan. Cook for around 2 minutes until the crêpe is set and the bottom is golden. Flip and cook for another minute on the opposite side.
STEP 3
Serve warm!
