Vegan Hot Chocolate

Just to specify, this is a vegan dark hot chocolate, not hot cocoa. It’s thick, rich, indulgent and definitely not for the faint of heart. Make this when you’re in need of a warm sweet hug. It will brighten you up from the inside out.

Ingredients
2 cup non-dairy milk
1 tbsp cornstarch or tapioca starch
4 tbsp coconut sugar
1 cup dark chocolate
¼ salt
Method
STEP 1
In a saucepan over low heat, combine milk and cornstarch and whisk to combine.
STEP 2
Increase the heat to medium-high, and add the coconut sugar and dark chocolate. Continue to whisk as the mixture thickens, about 1-2 minutes.
STEP 3
Remove from heat and serve alone or topped with coconut whipped cream.
STEP 4
Store refrigerated for up to 3 days (if you can wait that long) in an airtight container.
