Peanut Butter Chocolate Blondies
These vegan peanut butter blondies are bursting with chunks of melted dark chocolate, and will make your house smell like the inside of a peanut butter jar. Enough said.
250g peanut butter
125g coconut or light brown sugar
400ml plant based milk
2 tsp vanilla extract
180g plain or spelt flour
½ tsp baking soda
¼ tsp salt
¼ tsp ground cinnamon
200g dark chocolate, chopped
60g peanuts, roughly chopped
Preheat the oven 175˚C fan/195˚C conventional and line a baking tin with parchment paper.
In a large bowl combine the peanut butter and sugar. Add the milk and vanilla extract and whisk until combined.
Stir in the flour, baking soda, salt and cinnamon to the bowl and stir to combine. Next, stir in the chopped chocolate and peanuts.
Pour the batter into the prepared tin. Bake the blondies for 30-35 minutes, until a toothpick inserted in the centenaries comes out clean.
Let the blondies cool for 15 minutes before removing them from the tin and slicing them.
