Vegan Peanut Butter Overnight Weetabix

The latest tik tok trend, overnight weetabix, had a vegan makeover in the form of these vegan peanut caramel overnight weetabix. It’s creamy, fresh, smooth and crunchy and basically tastes like eating dessert for breakfast.

Ingredients
Base:
4 weetabix biscuits
200ml plant based milk
2 tbsp + 2 tbsp maple syrup, divided
180g plant based greek yoghurt (we used Oatly)
Peanut Butter Caramel:
4 tbsp peanut butter
2 tbsp maple syrup
1 tsp coconut oil, melted
¼ tsp salt
20g roasted peanuts, chopped
Method
STEP 1
Use your hands to crumble the weetabix into a small baking dish or tupperware.
STEP 2
Pour the milk and 2 tbsp maple syrup over the weetabix, and stir the ingredients together until fully incorporated. Use a spoon to flatten the base in an even layer.
STEP 3
In a small bowl, combine the yoghurt and 2 tbsp maple syrup. Spread this over the weetabix base.
STEP 4
Last, make the peanut caramel by combining the peanut butter, maple syrup, melted coconut oil and salt. Whisk it together until smooth, then pour it over the yoghurt and carefully spread it in an even layer.
STEP 5
Top the peanut butter caramel with the roasted peanuts.
STEP 6
Cover the baking dish and let it sit in the fridge overnight, or for at least an hour.
