Easter eggs are so 2018, make this bark instead. Just kidding, we love Easter eggs. Why not make both? We topped our white chocolate bark with freeze dried raspberries and pistachios, but don't let that stop you from getting creative. Coconut flakes? Great idea. Chocolate shavings? Also a great idea. Caramel? An even greater idea. This chocolate bark is your blank canvas.
You might be wondering how we managed to make actually good vegan white chocolate. Well white chocolate is typically made up of cocoa butter (vegan), sugar and milk powder (non vegan). We kept the first two, and subbed milk powder for smooth cashew butter. It's rich, delicious and melts in your mouth.
Line a baking sheet with parchment paper. Melt your cocoa butter and powdered sugar over a double boiler. Add the cashew butter in and whisk until smooth. Remove the mixture from heat and pour it onto the lined baking sheet. Sprinkle with freeze dried raspberries and crushed pistachios, or anything else you want on your bark.
