Sometimes a weekend baking session is just what’s needed. A few slow hours in the kitchen on a sunny afternoon with the radio on in the background. Then you’ll find yourself with freshly baked produce that’s perfect to snack on with cups of tea.

These plant-based cinnamon buns are soft, sweet, gooey and a great recipe to kick off this list of weekend baking ideas. We love to eat ours with a big pot of coffee to hand – we take ours with oat milk.
Disclaimer: there is moderate kneading and proving involved, but trust us, it’s worth every minute.
This sweet, nutty and flakey Bakewell tart is made up of three distinct layers: A crisp shortcrust pastry, sticky raspberry or cherry jam and irresistible frangipane. This tart is a nostalgic family favourite that packs as many memories as it does flavours.

This one’s a bit of a cheat because it actually requires no baking, very minimal work and can be adapted to what you have in the cupboards. Sub out cherries for any other dried fruit and even get creative with your biscuit choice too.
Yes, you heard that right. Here’s a recipe for the biggest and chewiest cookie you’ll ever need. It’s soft, crisp and designed to be eaten straight out of the tin with plenty of vegan ice cream in front of your favourite movie.
