Vegan breakfast tacos

The fritter patties are made from seasoned courgettes, while the green sauce to top them is made from tahini and herbs. The result is a vegetable-packed burger that’s decadent but healthier than your average burger.
Sweet potato and date salad
A salad at brunch doesn’t have to mean boring lettuce, and this sweet potato and date salad is proof of this. It’s sweet, savoury, colourful and packed with a range of nutritious plants. Swap with other seasonal vegetables you may have on hand like butternut squash or even pumpkin for more delicious iterations.
