Brunch is always a good idea — but it’s perfectly possible to have a decadent brunch that’s healthy, too. Whether you’re looking for healthier, vegan versions of brunch classics or vegetable-packed brunch recipes, you’ve come to the right place.

These tacos are perfect for your next Mexican-themed brunch. Soft scrambled tofu paired with a punchy pico de gallo and warm tortillas are moreish and a great way to start your day. Pair with micheladas for a spicy bottomless brunch you’ll want to recreate every weekend.

Using silken tofu and cashews for the cream topping, this is a waffle recipe high in protein and it’s a more healthy alternative — but still tastes delicious. Top with fresh fruit for added sweet goodness.

I know what you’re probably thinking: a burger? Healthy? So i’m pleased to say that this one is a great lighter burger to serve up on your next brunch date. The fritter patties are made from seasoned courgettes, while the green sauce to top them is made from tahini and herbs. The result is a vegetable-packed burger that’s decadent but healthier than your average burger.

A salad at brunch doesn’t have to mean boring lettuce, and this sweet potato and date salad is proof of this. It’s sweet, savoury, colourful and packed with a range of nutritious plants. Swap with other seasonal vegetables you may have on hand like butternut squash or even pumpkin for more delicious iterations.
