Healthy lunches definitely don’t have to mean boring lunches — you can make delicious creations full of healthy, fresh ingredients to keep you going until dinner. Here are a few of our favourites.
Sweet potatoes are in season right now, so there’s no excuse not to make this wonderful salad. The addition of cannellini beans, and walnuts adds great texture, while the potatoes and dates add a sweetness that balances the dish.
It doesn’t get much fresher than this herby, tangy courgette salad. The courgettes are marinated, which ensures they absorb all of the lovely flavours in the dressing, and also become a lot more tender in texture because of the acidity in the lemon juice.This is a really quick and simple salad to make, you can prepare the salad ahead of time and then the flavours will only intensify.
Because who said sandwiches aren’t healthy? This sandwich is packed with crisp veg and is also extremely cupboard friendly and endlessly adaptable to what you might have on hand. No chickpeas? No problem, use cannellini or butter beans. All out of vegan mayo? Sub it for tahini (loosened with a little water), hummus or even vegan yoghurt.
This soup is deliciously creamy and silky, and bursting with flavour. A dollop of yoghurt to make it even richer is always a good idea, and you also definitely can’t go wrong with a slice of sourdough on the side either. Save this recipe for winter lunch breaks, where you need a comforting and filling pick-me-up.
