A Sunday roast isn’t complete without perfectly crisp and fluffy roasted potatoes, but how do you make the best vegan roasties? Keep reading to discover our top tips.

The feeling when every element of a roast dinner is spot on is pure magic. Here is everything you need to know about perfecting your vegan roast potato game.

We swear by Val’s recipe for vegan roasties. This recipe calls for one kilo of Maris Piper potatoes, plenty of garlic, olive oil, salt and fresh rosemary. We love to eat them alongside a crunchy and succulent nut roast with lashings of Iona’s rich red onion vegan gravy.  

Top Tips

Here are some of Val’s insights to help reach potato perfection: 

  • Parboil the potatoes in heavily salted water - then every bite potato is perfectly seasoned
  • Let the potatoes steam dry after parboiling - you’ll be left with fluffy potato interiors 
  • Heat some of the oil in your baking tray before adding the par-boiled potatoes - when the potatoes make immediate contact with the hot oil they’ll form a wonderful crunchy crust on your potatoes
  • Turn the potatoes every 15 minutes - Each side of your roasties will perfectly crisp up

How to make roast potatoes vegan

Traditionally animal fat is used to cook roast potatoes as the rumour is that’s the only way to achieve ultimate fluffiness and crispiness, but we’re here to tell you that there’s another way that’s tastier, better for you and kinder on the planet. Vegetable oil or coconut oil are our favourite alternatives.
