What is a Victoria sponge?
The Victoria sponge or Victoria sandwich is named after Queen Victoria, who was well known for her love of afternoon tea.
Traditionally, the Victoria sandwich was filled with jam alone, but you’re more likely to find a layer of cream in there too these days and a dusting of icing sugar on top.
Are Victoria sponge cakes vegan?
No, traditional Victoria sponge cakes aren’t vegan-friendly as there are generally eggs and butter in a sponge batter plus the dairy cream in the filling. However, there are plenty of tasty plant-based versions.
