Our Favourite Winter Salad recipes
Winter and salad may not seem like the most natural combo, but in a season with a lot of rich comfort foods involved, it’s nice to have some light bites thrown in there too. Here are our favourite vegetable-forward salads that are packed with flavour.
Squash is in season and at its best from September to December, so make the most of the deliciously nutty and sweet vegetable in this hearty salad. It’s packed with flavour thanks to a herby, spicy sauce, and topped with sweetcorn and vegan feta for a hit of both sweet and salty.
These roasted beets are tender and sweet, and pair wonderfully with sweet oranges and a tangy, zesty vinaigrette. Cumin and coriander seeds give the salad a fragrant, earthy flavour, making it a great way to add a dose of colour to your plate while beets are in season.
We may be bending the rules a bit here with what constitutes as a salad. But this number still deserved a spot on this list. When eaten hot, it’s a bake, but cold it's a salad, and in both forms it is very much moreish.
Radicchio salad may give summery vibes, but did you know that pears are in season from September? Take this as a sign to make this delicious salad, with a zesty dressing, delicious homemade croutons and a crunchy, sweet pecan topping. It’s a texturally diverse dish packed with bold flavours, and it’s always a crowd pleaser, too.
Sweet potatoes are in season right now, so there’s no excuse not to make this wonderful salad. The addition of cannellini beans, and walnuts adds great texture, while the potatoes and dates add a sweetness that balances the dish.
