by Fabian Jackson

4min read

Here’s our guide to the best produce that February has to offer in the UK. Keep reading to discover which fruits and vegetables to buy this month and some tasty plant-based recipes to champion the seasonal stars.

Eating seasonal produce is a great way to ensure what’s on our plate is the freshest and most environmentally friendly food it can be. You might think that eating local vegetables during the end of winter would limit the variety of what’s on offer, but this isn’t entirely the case.

Seasonal recipes for February

Here is the creative part, where you get to turn local ingredients into delicious meals.

cauliflower soup

Roasted cauliflower soup

Because it’s still winter and a warming soup will always go down well.

roasted veg

Parsnip and Brussels sprout bake

We don’t know why ingredients like sprouts and parsnips get such a bad rep – we love them for their textures, flavour and nutrition and this bake shows them both off at their finest.

traybake

Turnip, red onion and apple traybake

Another traybake because February is already hard enough. When it’s already dark after work, ten minutes of chopping is all you need to commit in order to have this tasty dinner.

bolognese

Cauliflower Bolognese

Don’t know what to expect with this recipe? Well buckle in for a world of rich and hearty pasta – you’re welcome.

pumpkin pasta

Pumpkin sage pasta

This simple weeknight pasta is sweet, cosy, and basically comfort food at its finest. What’s more, is that it comes together in under thirty minutes!

All that’s left to do now is pick a recipe and get to your local market!

Let us know what ingredient you’re most looking forward to this month in the comments.
