Once you’ve mastered this base recipe, the world of plant-based meringue desserts is at your mercy. Who isn’t immediately transported back to childhood summer days with the taste of an Eton mess? This recipe uses coconut cream, mint, orange and dark chocolate shavings, lending this dessert to the winter months too.

This recipe from School Night Vegan is the perfect example of Italian-style aquafaba meringue (the technique where you blow torch your meringue to cook it – fun, right?!). It’s a crisp pastry casing filled with a tart lemon curd and magically topped off with generous quantities of vegan meringue.

Vegan pavlova recipe 

We love this recipe from Cook Veggielicious. It makes a dreamy pink meringue that’s kept company by whipped coconut cream and fresh mixed berries, although if out of season, defrosted frozen berries will work just as well. It’s designed for sharing, but we won’t tell anyone if you don’t want to.
