For many people working from home, having access to your kitchen doesn’t necessarily mean you want to spend your entire lunch break cooking in it. With a bit of prep and light cooking, you won’t be missing your sandwich meal deals anymore. Here are some easy vegan lunch recipes that are quick to put together, fresh, and super filling. 

Pimped-up avocado toast

This is avocado toast — but not as you may already know it. Take your pick from avocado and sourdough toast and avocado and pineapple salsa tortillas for a zesty, creamy and stupidly easy meal. It’s technically breakfast, and we can all agree that breakfast foods eaten outside of normal breakfast hours somehow tastes even better, right?

Vegan BLT sandwich

Banish soggy sandwiches picked up on your morning commute and instead rustle up this smoky and flavourful vegan BLT sandwich. Instead of classic bacon, we’ve got slices of roasted aubergine. In under 20 minutes, you can have creamy houmous, smashed avocado, smoked vegan ‘bacon’ and juicy tomatoes in this delicious sandwich. This recipe makes two, so give the other to your favourite person (or the more popular option: wrap it up and save for yourself later).

It’s filling enough to keep you powering through your work, hydrating and all-round a good idea any day of the week. And the best part? It can be ready to eat in less than 15 minutes. 

Creamy Fresh Pasta

For a quick and filling pasta dish for lunch get your hands on this fool-proof recipe. Seven ingredients (two of which are salt and oil, so really it’s five ingredients) and 15 minutes are all that’s necessary to have fresh, creamy and deliciously simple pasta ready to eat. This recipe serves two, so if you have leftovers simply stash in the fridge and have cold the following day — it tastes just as good.

Cheesy Gnocchi

This gnocchi is the perfect lunch for at home working. It’s simple and can be made in eight minutes, and easy access to your kitchen provides the perfect opportunity to make a freshly cooked bowl of gnocchi that is ready in under 10 minutes. With a toasted breadcrumb topping, every bite is more creamy, soft and crunchy than the last.
