We’re rounding up our favourite vegan breakfast ideas. And we’re not just talking about the mighty avocado toast (although obviously a winning combo). Think fluffy pancakes, waffles and sticky cinnamon buns. Because every day is a Sunday at the moment right?
We thought we’d bring brunch to you since Saturdays just got a whole lot sleepier and heading to our favourite brunch spots for a morning of coffee-sipping and avocado-eating currently feel like a far off dream (slightly dramatic but true).
Crunchy Grain-Free Granola
This crunchy and moreish cereal will have you grabbing handful after handful. Use this recipe as a base, and adjust the optional (but definitely recommended) add-ins to taste. Our go-to is maple syrup and cinnamon, but we love adding cardamom and orange zest for a twist on the classic flavours. Make a batch at the weekend and your future-sleepy-morning-self will thank you later.
Sticky Buns
Turn pantry staples into these gooey, soft, sticky swirls of deliciousness. The dough for these buns can be made a day in advance, so you can bake them first thing in the morning for an easy vegan breakfast or whenever cravings strike (or both, every day, three times a day...just us?).
Creamy Oats - Two Ways
Whether you want a comforting bowl of warm oats with a quick, sweet tahini sauce, or a fresh, vibrant chilled bircher muesli for a vegan breakfast on the go, we’ve got you covered. Ready in under 10 minutes, these creamy oats offer the fastest solution to your hungry mornings.
Waffles
These gluten-free waffles are so good you’ll want to eat them every day of the week (no judgement here). Top with fresh fruit, your favourite plant-based yoghurt, or simply drizzle (read:drown) them with syrup.
Didn’t think you could make french toast from plants? Think again. This is soft, sweet, hearty and, best of all, can be whipped together in under 20 minutes. We paired it with a fresh raspberry sauce (top tip: double up the recipe and use it to top porridge, cereal and even toast). A winner for the whole family.
Fluffy Pancakes
It’s not that we can’t count, but it would have been rude not to include these fluffy vegan pancakes into our round-up, so here’s our sixth favourite recipe. Especially since we’ve cracked the ‘fluffy’ part. The trick? Apple cider vinegar. Use it to create a vegan ‘buttermilk’ that will give your pancakes an incredible texture and rise. Trust us, you’ll never go back.
