Our Favourite Christmas Leftover Recipes

Just like that, the festive period is upon us again – filled with reconnecting and indulgent eating. There’s nothing better to look forward to than a veritable feast of plant-based, roasted goodies; but what should you do to make the most of your inevitable leftovers? Keep reading to discover our favourite vegan recipes to give your surplus food a second lease of life.

It’s very easy to give in to the eyes-bigger-than-stomach habit that happens in supermarkets at this time of year. But it’s also a time when food waste is at its highest. With that in mind, here are the recipes we turn to when we’ve got festive leftovers:

Here are a few of our favourite recipes that are guaranteed to turn any leftover produce into something special that everyone will be sure to make space for – no matter how full they still are

What’s one of the biggest culprits for over buying – potatoes. We could buy fewer, yes, but we’d be distraught if there was the slightest chance that there wouldn’t be enough roasties on the big day.
