Healthy vegan breakfast recipes for every mood
This recipe is perfect for those people who are craving something sweet, nutty and healthy in the mornings but time usually isn’t on your side. We love to make a batch of these at the weekend and have them for breakfasts on-the-go during the week – if they stick around long enough!
Sometimes the only start to the morning is a breakfast that warms you up steadily with every mouthful. It can go from a blurry, pre-coffee concept to AM saviour in only 15 minutes. We usually opt for stewed plums when they’re in season, but any fresh (or frozen) berries will work just as well.
Here’s another great idea for anyone who likes to prep ahead of time. We think it’s especially tasty with Val’s coconut yoghurt and fresh fruit. It takes around half an hour to make a batch of this nutty granola and it will keep in an airtight container for up to two weeks – that’s breakfast sorted for a fortnight.
So maybe it’s a bit of a millennial cliche to add avocado toast here, but this is it done in three ways like you haven’t tasted before. One is an avocado and pineapple salsa on crunchy tortillas, one is classic sourdough but with a herby twist and the third is avocado and walnuts on toasted banana bread. Any of these will more than set you up until lunch.
All that’s left to do now is decide which one to make first – we never said that part would be easy!
