Sweet potato and plantain tacos
Smoky, roasted sweet potatoes and sweet caramelised plantains are quite the winning combo in these savoury and sweet tacos. Paired with a punchy salsa and a cool cashew sour cream, every bite is filled with a range of flavours and moreish textures. Top your corn tortillas with all the fillings, and serve with fresh coriander and lime juice for extra zing.
Sweet Potato and Black Bean Jamaican Curry
Sweet potato is perfect for this aromatic, fragrant curry, soaking up all of the complex flavours of the coconutty sauce. The sweetness of it, alongside the savoury beans, gives it a lovely and hearty feel, perfect with fluffy rice and some extra thyme to serve.
Thai loaded sweet potato
A simple lunch or dinner that will satisfy your cravings for something sweet, sour, creamy and savoury, these loaded sweet potatoes make a great midweek meal (and make Mondays bearable). A zingy sesame lime slaw makes for a texturally rich dish, while a quick peanut dressing gives it a delicious tang.
Sweet potato and date salad
A hearty dish that’s perfect for picnics or simply to eat during WFH lunch breaks. Proof that salads can be as robust as you want to make them, this delectable mix includes cannellini beans, walnuts and lamb’s lettuce in addition to our mighty sweet potato. It’s sweet, savoury and full of fresh flavours.
Roasted sweet potato traybake
This time we’re roasting sweet potato and slathering it in peanut butter sauce, and we’re definitely not mad about it. Paired with punchy red peppers and baked tofu, it's a hearty, flavour-packed lunch or side dish that can be eaten hot or cold. And trust me when I say that the peanut butter sauce is truly something to behold.
Vegan leek and sweet potato soup
This soup is essential during the colder months. With a few ingredients and half an hour (maybe less if, unlike me, you're quick at prepping) you can have this hug-in-a-bowl ready for you to tuck into. It's warming, creamy and somehow always seems to hit the spot.
