Because nothing says comfort better than the many forms potatoes can take. Here’s a roundup of our favourite recipes that will make your spuds sing.

The potato is the second most wasted food in the UK, according to WRAP, but with these recipes, you’ll be sure to get through your bag — and keep going back for more. Versatile and tasty, the humble potato shines in these delicious vegan meals.

This vegan potato gratin, though designed to be a side dish to your favourite nut roast or vegan meats, will unwittingly steal the show. It’s crispy, it’s creamy, and it’s all-around dreamy. Using plant-milk and cream, Val has successfully (maybe too successfully, judging by our clean plates) veganised this decadent classic.

This one-pot, empty-the-fridge curry ticks all the boxes. As well as being deeply rich and warming, it's extremely versatile. It’s a great way of using up odds and ends of produce you may have in the fridge, and in turn you are rewarded with a delicious curry made up of whatever you have on hand.
