Leek is the secret ingredient in many delicious, creamy vegan recipes, adding extra depth of flavour to a range of dishes. Here are some of our favourites, perfect for mid-week dinner inspiration.

This dish is creamy, comforting, and decadent, and is the perfect weeknight vegan dinner when you’re in the mood for something rich but easy to make. It’s also a great one to make to ensure you get through any bread you may have that is going stale — old stale bread gives you the best results, so you’re also championing avoiding food waste in the process.

Best reserved for rainy days, this soup is a hug in a bowl. It’s simple but will leave you feeling warm and full, especially when served with a thick slice of bread. You only need a few ingredients and less than half an hour to whip this up, making it a great work-from-home lunch or a simple and warming dinner.

This asparagus galette is a delicious addition to picnics and gatherings while making an equally satisfying summery dinner (it’s delicious hot and cold, so it's absolutely delicious on those warm evenings where you want lots of cold deli-style picky bits and cold quiches, trust me). Substitute any leeks you may have in the fridge with the spring onions in the recipe and you have a delicious twist on this super green and bright galette.

Spanakopita is a much-loved staple of Greek cuisine, and our vegan version is inspired by the iconic pastry. They’re filled with spinach, garlic, leeks and vegan feta cheese, to make a rich and creamy filling, wrapped in a crisp, golden and flaky pastry. Bring to picnics, make as a snack, have it for your dinner — these are fit for practically any occasion and any time of day.

Cauliflower reaches its ultimate form in this, used to create a creamy, velvety-smooth sauce. Packed with sliced leeks and peas and folded into your favourite short pasta, this dish is comforting and full of great flavour. Throw in the breadcrumb topping for extra crunch, and this dish is the ultimate comfort food.
