Using some freezer staples, it's also highly versatile and works lots of different combinations of vegetables that you may have on hand. Perfect for days you’ve got leftover rice from yesterday’s dinner because day-old rice is encouraged for this one!

Good quality stock, Spanish Paprika (ideally from Vera) and saffron strands (from Castilla la Mancha, if you can find it) are the backbones of an authentic and delicious paella.
