Three Exciting Ways To Cook With Kale
Kale can be seen as quite a tricky vegetable to work with, but it’s actually much easier than you’d think to get the best out of it. Here are our top tips and favourite recipes to make with kale.
Blending kale may seem like quite a strange option, but it can be used to create delicious smoothies (our Mango + Greens smoothie is a good example), pasta sauces, and soups. Our Parsnip and kale soup with parsnip chips makes for a souper green (sorry) and satisfying lunch, and is packed full of kale for a simple and healthy meal that’s creamy and nourishing. Best for rainy spring days.
Whether you put it in the oven with some seasoning to let it crisp up (kale chips, anyone?) or you add it in a traybake for an extra hit of green, baking it is another great way to yield delish results from kale. Our vegan kale and leek bake is hearty and comforting, with the kale giving the dish an earthy flavour and texture that pairs perfectly with the creamy and buttery sauce and a crunchy breadcrumb topping. Serve with a simple green salad for a delicious mid-week dinner.
Spring greens work amazingly well in stir-fries and kale is definitely no exception.
