Shawarma spice mix  This spice mix comes from our oyster mushroom shawarma, courtesy of our guest blogger Jess Tattam. A paste made up of baharat spice mix, garlic, lemon, olive oil, maple syrup and salt and pepper is delicious when brushed onto a skewer of meaty oyster mushrooms and set over the grill. Use it on other veggies too — a mixed pepper and courgette skewer with this mix also works wonderfully.   Miso glaze  A miso glaze is an excellent marinade for a range of vegetables to put on the grill. This recipe uses aubergine, and the marinade is a tasty mix of sweet and savoury. The addition of sugar to the marinade helps your chosen vegetable to caramelise when cooked, which works beautifully with the smokiness that comes with grilling.    Thai veggie marinade  Another marinade that works amazingly well on your favourite vegetable skewers. This thai vegetable marinade uses garlic, soy sauce, ginger, cumin and garam masala to create a deeply satisfying and savoury marinade that you’ll generously drizzle over your creation. We recommend using tofu in the skewers as it soaks up the marinade super well.   Buffalo sauce  For an american-style classic, you’ve got to try this delicious buffalo sauce marinade that acts as a delicious dip, too. A classic hot sauce as the base is mixed with vinegar, butter, garlic, onion salt and maple syrup for a spicy, tangy marinade that is great on tofu and starchy vegetables.
