This vegan Christmas Dinner spread will impress your guests, look 100% Instagram worthy, and make you reach for seconds, thirds (and fourths?). Complete with individual Mushroom Wellingtons, to-die-for crispy roast potatoes, and brussels sprouts you’ll actually enjoy, December 25th just got a whole lot tastier.

Mushroom Wellington

No vegan Christmas dinner would be complete without a centrepiece. And these individual Mushroom Wellingtons are just the thing you need to wow at Christmas. Making individual wellingtons may sound like extra effort, but is actually the Christmas trick of a decade. It means there's no messy cutting and no awkward slices.

Parsnip & Brussels Sprouts Bake

We know brussels sprouts aren’t everyone’s cup of tea, but these brussels sprouts — roasted with parsnips, topped with toasted walnuts for an added crunch, and scattered with pomegranate seeds for a little sharpness — will have you reaching to the bowl for more. Trust us.
