Today we’re spotlighting the hidden treasure that’s probably hiding at the back of your cupboard. Not only is the all-round protein packing legume the star of everybody’s favourite dip, houmous, but they’re capable of so much more! Keep reading and you might just find a few new tasty renditions of the humble chickpea.
Chickpeas are one of our favourite cupboard staples. Beyond being protein-rich, they’re also a great source of lots of the minerals we need in our diet, like iron, magnesium and phosphorus.
Vegan chickpea snack recipes
We’re always looking for new healthy and delicious snacks to break us out of eating routines, and we think chickpeas might just be the winning ingredient. Here are a couple of our favourite recipes:
We’re obsessed with this crispy, roasted turmeric chickpeas recipe from Kalyn’s Kitchen – a perfect blend of aromatic flavours and a little hint of spice. They’re the ultimate snack and substitute for crisps, and they’ll keep in an airtight container for a couple of days (hats off to you if you’re able to make them last that long!).
If you think you know houmous, then think again. This recipe for beetroot houmous from our Rainbow Falafel Mezze dish is sunshine in a bowl and well worth a try.
Chickpea recipes for a vegan breakfast
Whether you’re working from home and have a little bit more time than usual to make your breakfast, or you’ve got to fuel up for a day in the outside world; a chickpea-breakfast could set you up for anything that might be thrown your way.
