Tackling Food Waste: Our Favourite Apple Recipes

We’re all guilty of throwing produce away when it’s looking a little worse for wear but still edible, so here are some recipes to get the most out of food that you need to use up. 

Did you know that globally, we throw away 3.7 trillion apples each year? That’s a lot of missed opportunities to make some truly delicious dishes. So if you’ve got some apples that are looking a bit bruised or you took a bite out of it to find it was just too soft for your liking (is there anything more disappointing than this?), here are some tasty alternatives to chucking them in the bin.

These apple pie pancakes are the perfect breakfast, brunch, dessert, or sweet snack — and it’s an excellent way to use up a couple of apples alongside ingredients you’re likely to have lying around in your cupboard so why wouldn’t you make it?

This American classic got the vegan treatment and unsurprisingly, we’re loving it over here. It’s buttery, spiced with a generous and warming dose of cinnamon, and is a decadent dessert that’ll have you eating a little bit more whenever you’re in your kitchen.

Apple pie lovers and cookie fans, rejoice — because the only thing better than one type of dessert is two combined together. These cookies are sweet, golden and chewy, and the perfect solution to an apple you’ve got lying around that has seen better days.

Keep things classic and tasty with these vegan apple pies. Crisp, perfectly spiced and bursting with juicy soft stewed apples, it’s great for a couple of apples you’re not willing to let go of. Use store-bought pastry, or if you’re in the mood for a bit more of a challenge, have a go making this with recipe development chef Flo’s vegan pastry recipe. Either way, a batch of these will brighten your day.
