You don’t have to feel like you’re missing out on Italian food due to a gluten-free diet; the cuisine can be more than just pizza and pasta! Take this risotto: it's creamy, fragrant and rich, whilst being gluten-free. Arborio rice is gluten-free, so any risottos you make can be easily given the gluten-free and vegan treatment. This is a veganised version of the Milanese classic, so you can indulge in the best Italian food with ease.
Make a fakeaway with this deliciously moreish fried rice. While lots of East Asian dishes use soy sauce which isn’t gluten-free, it can be swapped for tamari which is— and it's what we use in this rice to make it salty and savoury. It can be altered with whatever vegetables you’ve got in the fridge or freezer, making a great end of the week treat.
Mexican food is still a fiesta for the gluten-free vegans amongst us, as traditional Mexican cooking often uses corn rather than wheat. So, these Mexican-inspired tacos are yours for the taking if you have a gluten intolerance— simply find corn tortillas (it’s the authentic way, anyway!). These are available at all major supermarkets. When you’ve got your hands on them, you can make loads of vegan tacos, including our breakfast tacos and smoky cauliflower tacos.
Gluten-free vegan desserts
The base of this is, unsurprisingly, old bread, so use up any gluten-free bread you’ve got knocking about to create this warming and nostalgic bread pudding. Sweet, spiced, thick and delicious, it’s the best way to bring in autumn.
Need a quick fix for your sweet tooth? Try these cookies. Only 5 ingredients, and using almond flour, these are tasty treats that can be ready to eat in 20 minutes. How great is that?
