Vegan mac and cheese
A mac and cheese is a classic that’s great for batch cooking and loved by kids and adults alike. This low-maintenance recipe uses vegan cheddar, butter and milk to create a bubbling, rich mac and cheese that’s like the original. A spoon of grainy mustard and some nutmeg give the dish a lift and zing that is super moreish — but that’s okay. As the recipe serves six people, who needs leftovers, anyway?
Quick tomato pasta
You can’t go wrong with a glossy, tangy tomato pasta. This recipe uses five ingredients (plus some olive oil and salt we assume you’ve got stashed in the kitchen) and takes only 20 minutes to make. Creamy, smooth mashed potato is a unanimous comforting food, but it only gets better when soya mince cooked in a thick, rich tomato gravy is also added into the mix. It’s a family favourite and a dish that is perfect for sharing on a winter evening.

Potato on a pizza? Carbs on carbs? This is about as universally liked as it gets. It’s a great recipe to make and get the kids involved in too, but it's sure to suit the needs of all adults craving some good old comfort food too.
Vegan chicken tikka masala
A community confession spawned this fantastic recipe — a vegan ‘chicken’ curry that all the family will enjoy. This tikka masala is rich and creamy, but mild, making it a great curry to share with the kids and with the adults at the table who aren’t great with spice (you know who you are).
