Vegan Dinner Recipes For Two
Whether you’ve got a date night planned or a dinner and catch-up with a friend, here are delicious recipes perfect for a night in for two.
This oyster mushroom shawarma is the delicious creation of Jess Tattham, our guest recipe contributor, and it’s perfect for serving up for a casual saturday dinner. With melt-in-the-mouth mushrooms coated in a smoky, bunch spice mix and miso tahini and zhoug providing a hit of freshness and umami, this is a dish to wow someone with your cooking chops.
The perfect midweek meal. This cheesy gnocchi takes only eight minutes to prep and cook, and it’s so good you’ll finish it in half that time. A cacio e pepe-like sauce and crunchy, herby breadcrumbs are so good it’ll have you wondering how something can be so easy to make and yet so satisfying.
Pizza — but not as you may know it. The only way to make pizza even more of a comfort food is to throw some more carbs on it, and this has certainly been achieved in this drool-worthy pizza. A potato, red onion and vegan cheese topping makes this a great dinner to share for your next movie night.
This is for the people that like cooking but love eating, and are happy to cut corners in the kitchen wherever possible! Our spaghetti puttanesca recipe has performed the trick of being savoury, punchy, and a true one-pot wonder. Make it in 20 minutes for a pasta dish that is equal parts tasty and effortless.
This mushroom and ginger stir fry is citrusy, sticky, sweet, and looks like much more time and effort is spent on it than reality. It’s a recipe to have on hand for when you may have extra greens to use up, as they can be subbed in easily for equally flavourful combinations. You can make it in under 25 minutes, so it’s a great fakeaway dish that will come together quicker than ordering in.
