CHIMICHURRI PORTOBELLO MUSHROOM BOWL
Inspired by her travels to Argentina, Rachel wanted to create a spicy and fresh Chimichurri bowl that evokes the vibrant flavours of South America.
"The delicious cayenne pepper butter bean mash is spicy, smokey and smooth. It pairs so nicely with the chunky mushrooms and acidic, herbaceous chimichurri."

“One of my mum’s favourite memories is being in Sierra Leone, where her dad is from, and eating peanut stew. I wanted to make it for her in a vegan way, which inspired this version. The standout flavour is peanuts. Ground into a peanut butter, it thickens the stew and adds a really nice creamy, luxurious flavour.”
Double Green Orecchiette
A vibrant double green sauce, which gets its name from spinach and fresh herbs, is tossed over orecchiette pasta. Translated to 'little ears', the pasta shape adds great texture and perfectly scoops up extra sauce.
